The Pie Report, Online Edition

Old South Transparent Pie

1 partially baked 8-inch pie shell, cooled
1/4 cup unsalted butter
1 cup firmly packed brown sugar
3 eggs
1/2 cup light corn syrup
1 teaspoon vanilla
Pinch of salt

In a mixing bowl, beat the unsalted butter with the brown sugar. Beat in all 3 eggs, then stir in the corn syrup, vanilla and salt. Pour into the partially baked pie shell. Bake until filling is set, about 40 minutes. (Oven temperature not given, so use 375 degrees.) the pie is cooking

Image Hosted by ImageShack.usSo I happened to have all the ingredients on-hand and a couple of hours while my son takes his nap, so I whipped up the pie. Since I'm all impatient like that I didn't really do any prep for featured items to float in the pie. I searched around for what I could find that might work and found a little eskimo holding a fish. And so I will entitle my pie experiment, "Ice Floe Mishap".

Here's what the pie looked like before sliding into the oven:

I pulled it out of the oven when the timer went off and it's not yet complete. The surface is now quite brown and it's rather bubbly under the surface. Seething? We'll give it another 5 minutes.

I'm going to wait until husband is around before I cut it because he thinks I'm a nut for whipping up this little confectionary choking hazard. So the suspense is drawn out until much later this evening, unless you'll be at the Quimby's party tonight and can pursuade me to bring this little snack.

One thing is clear at this point -- the little eskimo feature won't be a surprise.

i'll be at the quimby's thing but i'm hesitant to take pie away from your husband. i want details tho.

That's the thing

Until I cut into it, as far as I can tell there is no transparency apparent. What you're seeing is literally how it looks. Kinda burntish. No burnt smell, though. Instead, it kinda smells like my grandparents' basement. Maybe it's, ah say ah say, it's a joke, son. Those ol' Southerners.

So, what's the story with this pie? Have you ever made it before? Now that it's a part of my life, I'd love to hear how it's a part of yours.

Was it really transparent? Looking at the ingredients, I can't quite see how it would be.

... this pie is transparent. In other words, not a bit of transparency, even once a piece was cut. But it was pretty tasty. It's been a great while since I've had pecan pie, but the consistency of this pie was a bit like a pecan pie without the pecan. It also had a nice chewiness to the top from all the sugar doing its cooked sugar thing. I'm a big sugar addict and can handle many sweets that others find nauseating so I may be understating the sweetness factor. I also originally thought this might be kind of a yucky pie, with the minimalist ingredients looking all wiggly and a bit like congealed gravy but nope, totally edible. I'm about to cut m'self another slice, in fact.

1. this sounds a bit to me like the traditional chess pie, which consists of exactly all these ingredients, but is not called "transparent".

2. i think it's weird that we have both a food category and a pie category. do we really need a food category?
